Start with your own payout statement
We are not going to quote you a commission rate, because it depends on your agreement and we do not know it. Go and look at your last marketplace payout instead. Gross orders at the top, what actually landed in your account at the bottom.
Work out what that gap is per month, then per year. For most independents that annual figure is the most interesting number in the business, and almost nobody has calculated it. Margins in independent hospitality are thin enough that it usually lands somewhere uncomfortable.
The cost that is not on the statement
Commission is the visible charge. The structural one is that the diner belongs to the marketplace. You do not get their number or their email. You cannot tell them you have added a special or opened a second branch. If they open the app next Friday, your competitor is one scroll away.
You are paying to rent access to people who have already eaten your food and liked it.
The counter full of tablets
There is an operational cost too. Separate tablets for separate apps, with someone re-typing those orders into the till so that stock and takings stay right. It slows service, it creates mistakes, and it irritates the kitchen.
